Charismatic Cabernet Sauvignon RACT members have the opportunity to try three different wine dozens from this issue. The extremely popular Quaffer’s Dozen is again a dozen bottles of easy-drinking wines. All the wines are well-made, have varietal character and go well with food. In keeping with our aim to promote Tasmanian wine we have once again included a mixed dozen of interesting and savoury wines in our Tasmanian Selection, with a range of styles and varieties that will enhance the dining experience. The black grape variety Cabernet Sauvignon dominates our feature dozen. Cabernet Sauvignon is arguably one of the world’s finest red grape varieties with the Bordeaux region of France the most recognised area in the world to be associated with the variety. In Bordeaux the grape variety can be blended with other grapes such as Merlot, Cabernet Franc and Petit Verdot whereas in Australia we have traditionally blended Cabernet Sauvignon with Shiraz. Since the late 1980s Australian producers have moved more towards adding Merlot while a very small number of producers have supplemented the other Bordeaux varieties. Interestingly, Cabernet Sauvignon is grown successfully in most of the world’s wine regions. While there may well be climatic and other influences that change some aspects of the variety there is usually a common theme of tannin structure, deep, rich colours, differing degrees of red berry character with the blackcurrant berry the most recognised. Cabernet Sauvignon is endowed with great ageing potential, developing complex aromas which may include capsicum, green pea, herbal and mint in wine from the cooler climates to richer red berry, plum characters with the nuances and flavour of chocolate from the warmer climates. The discerning buyer will be rewarded by cellaring Cabernet Sauvignon, as the complex aromas and flavours develop and the younger, more aggressive tannins soften as they mature.
